TECH Schedules Emulsion Workshop
in Salt Lake City

Do you know what cole slaw, tuna salad, potato salad and a real BLT have in common?  Yes, the answer is an emulsion – an emulsion of egg yokes and oil, which is more commonly known as mayonnaise.

This workshop will teach you all about emulsions: what types of emulsions there are, what their properties are, stability of emulsions (they are not thermodynamically stable – emulsions will eventually separate), nature of emulsion particles – size and shape, how to make emulsions, how to break emulsion, how to analyze and characterize emulsions, where are emulsions used, why do we use emulsions and what is the future of emulsions.
