  • February 4 -- Howard Peters, 7:30 pm - Presentation Topic: Chocolate - Food of the Gods at Bradley University, 164 Olin Hall - Peoria
    Abstract:
    Chocolate has been a part of New World culture for thousands of years. This talk includes: 1. Some high points of the history of chocolate and its production from the Mayan, Olmec and Aztec cultures up to the present; 2. Aspects of the processing of the cocoa bean & pod, fermenting, drying, roasting, conching, tempering, blending and finishing; 3. Some chemistry, biochemistry, and biology of chocolate and the active ingredient theobroma cocoa (literally from the Greek - Food of the Gods); 4. Some health aspects (flavanoids, polyphenols & other anti-oxidants) that this exotic food is good for you; 5. A discussion about aspects of the "dark side" of chocolate; and 6. A few circulating legends (& trivial connections) about chocolate.

Illinois Heartland ACS education programs enhance knowledge by generating, sharing and making information available to the community. Illinois Heartland ACS is a sought-after source of knowledge and objective information by researchers, educators, and the public.

We are the ACS!

The Illinois Heartland American Chemical Society has 240 chemist, chemical engineers, and educators in a 10 county area in central Illinois, including Peoria, Bloomington-Normal, Henry, Jacksonville and Galesburg. We are the local chapter of the world's largest volunteer, professional organization, the American Chemical Society (ACS). We are a 501(c)(3) non-profit organization. We invest in our local community by providing science education opportunities through seminars, meetings, workshops, summer internships, competitions, special activities, and partnerships with other non-profit, volunteer or professional organizations. Almost all events are free and open to the public.
