Michael Tunick, USDA

Molecules to Mozzarella: The Chemistry of Cheese

On Friday, April 27, 2007, Dr. Michael H Tunick of the USDA will present on "The Chemistry of Cheese." in Saranac Lake. Dr. Tunick earned his Ph.D at Temple University, and he previously worked with hides and leather. He has worked for the Dairy Processing & Products Research Unit of the USDA since 1983. He was responsible for developing low-fat Mozzarella for the National School Lunch Program.
