The Chemistry of Wine
Abstract:
The talk will include an overview of wine and wine making. Detailed
descriptions of the chemical composition of grapes and wine, laboratory methods
for analysis of grapes and wine, and organoleptic methods used for wine will be
discussed. The role of tannin and other phenolic compounds in wine and some
potential health aspects will be considered. The audience can participate in a
“component and varietal analysis” of representative red and white wines to
augment Dr. Simpson’s talk.
